Emotion Engine - Also known as EE, this was the Graphical heart of all PS2's and was in the first released PS3's and later removed due to cost cutting/financial strategy and replaced by Software Emulation.
DISC.SFO - File to force you to use the original disc of the installed HDD Game.
EBOOT - This file will boot PS3 games, it contains various information, patches would have been released for eBoots signed with 3.55 or lowers Keys, so that they could be playable on 3.55.
ELF - ELF means Executable and Linkable Format, this naming of file is present on PSP, PS2 and PS3.
EPROM - a type of memory that is erasable only by ultraviolet light
EEPROM - a type of erasable memory
erk - erk means Encryption Round Key
